“Apamdyn Kattamasy” is a classic version of Kyrgyz layered flatbread. The name translates as “Mother’s Kattama,” highlighting the homey, family tradition of its preparation.

History of the Dish

Kattama has been mentioned in the chronicles of caravaneers traveling along the Silk Road. It is believed that ancient travelers created this layered bread as a convenient and nourishing food for long journeys across mountain passes.

Ingredients and Preparation

The classic recipe uses only four main ingredients:
  • flour
  • water
  • butter
  • salt
Sometimes wild garlic leaves (known as jusai in Kyrgyzstan) or other herbs are added to enhance the flavor. The signature feature of kattama is its layered texture, making it filling and long-lasting.

Legend has it that caravaneers highly valued kattama for its nutritional power and durability: it provided energy for difficult mountain crossings and stayed fresh for days, making it the perfect “travel food.”
